hey yall,
I've gotten in a food rut and cant get out! I used to be at least somewhat excited by my two-week menu but lately im struggling- and maybe its because our apartment is missing a key appliance, an oven. Now we have a stove top, big convection oven, microwave, and Crockpot. I'm just wandering what your family favorites are or if you knwo of any handy resources for recipees. If it requires too much prep or is too vegetably i have the tendency not to follow-through. I am trying to be more ambitious with vegetables though.
Usually we have:
chicken parmessean on angel hair pasta (great recipee takes 20 min.i'd love to share it with anyone interested)
grilled cheese and tomato soup
quesadillas (just cheese and chicken) and corn- we'd love to hear any variations you have
chilidogs
loaded baked potatoes (we've done chili, or the classic potato toppings)- any ideas?
chicken fettuccine Alfredo with roma tomatoes
poppy seed chicken on rice
teriyaki chicken on rice (i haven't found a teriyaki sauce i really like though)
pizza (we've made some and of course had frozen)- any fun toppings?
BBQ chicken and mashed potatoes
chicken and dumplings and carrots
vegetable soup and corn bread
spaghetti
baked ziti
pork- we like tenderloin so we can have pulled pork sandwiches but its pricey- any ideas for pork roast?

Hi Betsy! It's Carly (Mackay) Pendleton. I have two places I like to go for recipes. One is thepioneerwoman.com (my all-time favorite website). She has a cooking section with lots of pictures and she has a great sense of humor. The other is bunchofcooks.blogspot.com. This is one that some of my neighbors started for us to share recipes. I'm not much of a cook so I'll take any help I can get. Good luck!

One of my favorite crock pot recipes is 2-4 chicken breast, a can of chicken broth, a cup of salsa, can of corn, and a can of black beans. Cook it for 4-6 hours, then add a 1/2 cup of sour cream and a cup of cheddar cheese. Serve it with tortilla chips or in tortillas and you have a yummy creamy black bean salsa chicken. It's easy and cheap!

I recently did a quick, easy pizza that Jeff and I really like. I got onion bagels and toasted them. Then I cooked chicken. I then put bbq sauce on the bagel, followed by the cooked chicken, and then mozarella cheese and baked it for a few minutes. It was delicious and so fast and easy. I would love all your recipes!! They sound yummy!
